Psole Recipe

Psole Recipe:

I have to say my husband (who is Mexican) is pretty picky when it comes to Mexican food because he grew up on his grandma's cooking and she's an excellent cook! So when I was given this amazing recipe for the yummy soup, Psole, I jumped at the opportunity to see how good it was. Turns out this is such an easy recipe and tastes amazing!!! The best part is that it makes enough for leftovers!

What you'll need:

Serving 4-6 people

Prep Time: 30-45 mins             Cook Time: 1-2 hours

1 family pack of porkchops (bone in or boneless both work)/ if you don't like pork chicken also works with this recipe
1 15oz or 8oz can of tomato sauce
2 chicken bullion cubes
2 garlic cloves minced or garlic powder works great too
6-8 anahiem peppers
1 dried red pepper
1 medium can of Hominy
1 Bay leaf
In the picture there is a can of Menudo, This is not part of the recipe it was a mistake! Needed to be a can of Hominy


1. Brown your meat, then cube your meat and put into crock pot or a big pan. Add a little bit of water enough to cook the meat until tender. Add 1 chicken bullion cube, the bay leaf and 1 clove of garlic into the pan to help flavor the meat.

2. While the meat is cooking, roast your peppers. I don't have a grill or a special pan I just turn on my oven to a low broil and put the peppers on the top rack until they the skin starts to look brown, then I rotate to get that affect over the entire pepper. It doesn't have to be 100% brown but roasted. Once I get the look I want I take the peppers out and put them in cold water and remove the top lay of the pepper. I just use my fingers and run the peppers you'll notice the skin will start to peel off a little bit.

3. Once the peppers are skinned then cut the top off and de-seed it if you don't want it too spicy. Keep the seeds for a little more kick. Put all the peppers into a blender. Next add in the tomato sauce, other garlic, and chicken bullion cube. Add the dried red pepper and blend all together. (The dried red pepper also adds a kick to the soup if you need it a little less spicy I wouldn't add it in.)

4. Once the meat is cooked add the sauce you made in the blender to the pan. Then add the can of hominy. Mix and cook on low-medium heat for about an hour-2 hours depending on how long you want to wait.

That's it!  This is really one of the easiest meals I have ever made.

To really make it good you'll also want to add the toppings.

It's traditionally served with chopped up cabbage or lettuce and a combination of diced onions and cilantro. Add both of those on top of the soup and it tastes even better and don't forget the lime!

The best part about Mexican cooking is that the spiciness is really in your hands. This recipe above gives it just enough of a kick that you're not sweating as you eat it.  So I encourage you to really play with it and fine tune it to your liking.

Cake Boss's Easy Ice Cream Cake

For Scout's birthday I made an ice cream cake. I saw how to make it on the Rachael Ray show.
What you'll need:
 2 tubs of ice cream, choose whichever kind of ice cream you want.
 1 box of cake mix, I did white but chocolate could work too
1 thing of whip cream.


Step 1: Let the ice cream thaw out a little bit then spread 1 tub of your ice cream in 9" cheesecake pan
Step 2: Add a middle, you could use crushed up Oreo or chocolate chip cookies.
Step 3: Add the second ice cream tub and put in freezer for about an hour
*Just a hint if the ice cream is too hard put in microwave for increments of 10-20 seconds.
Step 4: After ice cream is in the freezer cook cake as instructed on box.

This is what my ice cream looked like after I pulled it out of the freezer.


I used a knife to go around the edge to help I warmed it up with hot water.

Once the cake is done cut in half. Place one half on the bottom and then put the ice cream in the middle, basically like a sandwich.

For the frosting just put the whip cream all over and smooth. I obviously didn't do so well at that part...

Since I made the cake a day in advance I left it all in the freezer and decorated it about an hour before we ate it. 
Since my son is a huge train fan right now, we did a train theme. I used kit kats at the train tracks and just put recess peanut butter cups and peanut butter m&ms on the side.

This cake was so easy it definitely made a lot I better it could easily feed 10 adults. And the part that took the longest was baking the cake. If it weren't for that the cake would have been finished in less than 30 minutes.

New Years Resolution

I wonder how many people actually stick to their resolutions? I know I stick with mine for about a week maybe 2 if I'm really trying. So this year I'm going to try even harder to stick with my resolutions for the year 2013.

I've given it a lot of thought and the few I've come up with that I might actually be able to keep are:

1.) Find at least 1 thing to be grateful for each day.  I'm going to try not to repeat myself but I know there are somethings that I'm grateful for each day so I'm bound to repeat a few.

2.) Cook more! Simple as that I have all these recipe books that aren't being used. I think it's time to try new recipes.

3.) After I stop breast feeding I want to train for a half marathon and I want to complete insanity.

4.) I want to be back under 160lbs currently I'm at 171 so I think 15 lbs is a reasonable goal. I'd like that to happen by my baby's first birthday- August 31st.

5.) Spend more time with my husband. This past year was hard on us and I think we need to start spending more time alone.

6.) Keep my blogs up to date. I think that's pretty self explanatory ;)

7.) Do better at keeping track of our finances.

8.) Find a way to go to California to introduce my daughter to my husbands side of the family. Who we haven't seen in 2 years!

I think at that point that maybe all of them. It's a lot but I think I can do it!
